OK, not really, but M is extremely concerned about fat and won't eat a high fat diet with me, and my mom-in-law who is living with us loves carbs, but is diabetic, so eats them in moderation--as a result I find it very hard to follow a diet that we all like and can eat. I think that South Beach is the way to go. It is relatively lowfat--certainly low saturated fat, and by Phase 2 you can add back in some refined carbs like whole wheat, etc. This would be pretty much what M and his mom would prefer I think, and so I am going to try it. I bought the most recent SB book--there is a new one called "The South Beach Diet: Supercharged" and I have all the cookbooks because they are full of low carb mediterranean recipes anyway, so I have had them for a while now--I really like some of the recipes. I am going to avoid the super high oxalate foods, and continue to take my Calcium Citrate before each meal, and not worry too much about everything else.
In the new book, the first sample meal is supposed to be 6 ounces of vegetable cocktail, ham and cheese omelet with chives, and coffee or tea with 1% milk.
I couldn't find any ham without nitrates when I went to the Safeway yesterday (I should have gone to QFC--they have some) so anyway, I bought prosciutto instead and some goat cheese with herbs (5g fat/ ounce) which is a good low-fat cheese (according to the guidelines it should be 6g or less fat per ounce). I had a fresh sliced tomato instead of the vegetable juice--preferring fresh vegetables to canned or jarred juice. I am starting off with 2% milk in my coffee instead of 1%--I would have used fat free half and half as they suggest, but it is all around unhealthy as far as I can tell--it had a ton of additives and "corn solids" whatever that is, so I figured I would just stick with milk. Over time, I can switch it out to 1%--maybe next week, or whenever I run out of 2%...
Today will be my first eating out challenge on the diet as well--we are going to a movie this afternoon, so we will be eating either lunch or dinner out somewhere most probably...
